Use a good quality vodka. We recommend a minimum of 37.5% abv.

Sterilise your infusion jar. Heat oven to 140◦C/120◦C fan/Gas 1. Remove the lid. Wash the infusion jar and lid in hot, soapy water, then rinse well. Place the jar and lid on a baking tray and put in the oven to dry completely. This should take approximately 15 minutes. Leave to cool. Wash all other equipment in your GinMix kit.

Add 25 grams of juniper berries along with a tin of botanical blend to your jar. Do not add any flavoured botanicals at this stage. Avoid crushing the botanicals as this will result in a cloudy gin. Add 500ml of your chosen vodka to the infusion jar, stir and put the lid on. Leave to infuse for 24 hours in a cool dark place.

After 24 hours either add your flavoured botanicals, stir, replace the lid and leave for further 24 hours or if no further botanicals are to be added just stir, replace the lid and leave for a further 24 hours for the botanicals to infuse into the vodka. Beware of leaving it much longer than 24 hours and over infusing the mixture.

After 24 hours place the coffee filter in the funnel and put the strainer over the funnel. Put the funnel in your gin bottle. Carefully pour your gin mix into the funnel, ensuring you don’t over fill the strainer. You will need to discard the botanicals as you go. This will take at least 10 minutes to complete. Be patient it’s worth the wait. Your gin will either look a golden colour or pink if using our Blossom botanical blend.
